I pride myself on making things as uncomplicated as possible. I’ve written many times in this blog: Go the easy route!Try this life-saving hack! Don’t put more stress on yourself than necessary!
To practice what I preach, when I’m invited to someone’s house, my go-to is a store-bought delicacy, or maybe some wine.
Easy-peasy-lemon-squeezy.
Then I can take as much time as I want – as Pa would say – “Fartin’ around” and still not be late to an event.
Teara, on the other hand, constantly farts around and is always late (probably picking her perm). Pa says she reminds him of his sister, my Aunt Peggy (RIP ♥️) who was also notorious for fartin’ around.
I must have been feeling quite ambitious the other day when I was talking to Lol about what I should bring to Holy Saturday dinner – because I said I’d make rice balls.
RICE BALLS. What an idiot!
Maybe I thought she’d say no and I just wanted to look impressive for offering. I don’t know. It seems so far away now as I lay all snuggy in bed wishing I would’ve just supplied the wine.
Rice balls are A PROCESS, one in which I have already started, so there’s no turning back now.
You have to make the rice a day ahead of time so that the balls are easier to form. I did this on Thursday.
I was planning on actually frying them last night and then I sat down to watch Jeopardy! and only got up again to get ice cream.
I knew I should’ve just done it – but I didn’t – and now I regret it.
Instead I’m lying here wishing I just friggin’ did it so I could stay in bed and fart around until we go to my parents’ house.
Instead, I have to get my butt out of bed, sauté up a ton of ground beef, make what will feel like a thousand balls of rice, and then fry each one equally on each side.
Why did I do this to myself? And what’s the over/under on how many I’m going to burn because I’m a sucky cook?
These better turn out to be the best damn rice balls anyone has ever tasted in their entire lives. Never again.
Time to make the rice ballsss … 😴 🥸 😭
